48% Chardonnay, 49% Pinot Noir and 3% Pinot meunier, all handpicked? and gently pressed in pneumatic presses. settling for 2 days, followed by fermentation in steel tanks . To add complexity, the Chardonnay is fermented in french oak barrels. No malolactic fermentation is done to preserve the freshness of the wine.
